  • 1 tbsp olive oil
  • 1 lb raw shrimp, peeled and deveined
  • 1 medium onion, diced
  • 2 celery stalks, diced
  • 1 red bell pepper, diced

  • 4 cups chicken broth
  • 2 medium potatoes, peeled and diced
