Shrimp Bisque

Ingredients

  • 1 lb raw shrimp, peeled (reserve shells)
  • 2 tbsp butter
  • 1/2 onion, chopped
  • 1 celery stalk, chopped
  • 1 carrot, chopped
  • 2 cloves garlic, minced
  • 1 tbsp tomato paste
  • 1/4 cup brandy or dry white wine
  • 3 cups chicken or vegetable broth
  • 1/2 cup heavy cream
  • 1 bay leaf
  • 1/2 tsp dried thyme
  • 1/4 tsp paprika
  • Salt and pepper to taste
