Ingredients

  • 2 lbs beef stew meat, cut into 1-inch cubes
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 3 potatoes, peeled and cubed
  • 4 cups beef broth
  • 1/2 cup red wine (optional)
  • 2 tbsp all-purpose flour
  • 1 tbsp tomato paste
  • 2 cloves garlic, minced
  • 1 bay leaf
  • 1 tsp dried thyme
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

How it starts

    Season beef with salt and pepper, toss in flour, then sear in olive oil in a large pot until browned on all sides and set aside.

    Sauté the onion, carrots, and celery until softened, add garlic and tomato paste, then return beef to the pot with broth, wine, and herbs and simmer covered for 90 minutes.
