Ingredients

  • 3 lbs beef chuck roast, cut into large chunks
  • 6 dried guajillo chiles, stemmed and seeded
  • 3 dried ancho chiles, stemmed and seeded
  • 2 dried chiles de arbol, stemmed and seeded
  • 1 white onion, roughly chopped
  • 6 cloves garlic
  • 2 roma tomatoes, quartered
  • 0.25 cup apple cider vinegar
  • 2 bay leaves
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 0.5 tsp ground cloves
  • 0.5 tsp ground cinnamon
  • 8 cups beef broth
  • Salt and pepper to taste
  • Toppings: corn tortillas, chopped white onion, chopped cilantro, lime wedges

    Prepare the adobo sauce by toasting, rehydrating, and blending the chiles with onion, garlic, tomatoes, vinegar, and spices, then sear the seasoned beef chunks.
