  • 1.5 lbs beef chuck roast, cut into large chunks
  • 3 guajillo chiles, rehydrated
  • 2 ancho chiles, rehydrated
  • 1 arbol chile, rehydrated
  • 1/2 onion
  • 4 cloves garlic
  • 1 tomato, quartered
  • 1 tsp cumin
  • 1 tsp oregano
  • 2 bay leaves
  • 8 corn tortillas
  • 1 cup Oaxaca cheese, shredded
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, cut into wedges
