Ingredients

  • 1.5 lbs beef shank
  • 1 lb pork hock
  • 4 stalks lemongrass, bruised
  • 2 tbsp shrimp paste
  • 2 tbsp chili oil
  • 3 tbsp fish sauce
  • 1 tbsp sugar
  • 1 tsp annatto seeds (for color)
  • 1 lb thick rice vermicelli noodles
  • 8 oz thinly sliced beef (brisket or round)
  • 8 oz Vietnamese pork sausage (cha lua), sliced
  • 4 oz pork blood cubes (optional)
  • 1 banana blossom, thinly sliced
  • 2 cups shredded cabbage
  • 1 bunch mint
  • 2 limes, quartered
