  • 1 lb dried green split peas
  • 1 smoked sausage (rookworst)
  • 4 oz bacon or pork belly, diced
  • 2 leeks, sliced
  • 2 celery stalks, diced
  • 2 carrots, diced
  • 1 onion, chopped
  • 2 potatoes, peeled and diced
  • 8 cups vegetable or chicken broth
  • 2 bay leaves
  • 1 tsp dried thyme
  • Salt and black pepper to taste

    Sauté the diced bacon, chopped onion, sliced leeks, diced celery, and diced carrots in a large soup pot until softened.

    Add the rinsed split peas, broth, diced potatoes, bay leaves, and thyme, then bring to a boil and simmer for 90 minutes until the peas are very tender.
