  • 4 large eggs
  • 4 small corn tortillas
  • 1 tbsp vegetable oil
  • 1/2 white onion, diced
  • 1 clove garlic, minced
  • 1 (14.5 oz) can diced tomatoes
  • 1 jalapeño, seeded and minced
  • 1/4 cup chopped fresh cilantro
  • Salt and pepper to taste
  • Optional: 1/2 cup crumbled cotija cheese or shredded cheddar
  • Optional: 1/2 cup refried beans
