Ingredients

  • 2 boneless pork loin cutlets (about 6 oz each)
  • 4 large eggs, 2 for breading, 2 for topping
  • 1/2 cup all-purpose flour
  • 1 cup panko breadcrumbs
  • Vegetable oil, for deep frying
  • 1/2 large onion, thinly sliced
  • 2 cups cooked short-grain rice
  • 1 cup dashi stock
  • 4 tbsp soy sauce
  • 3 tbsp mirin
  • 2 tbsp sugar
  • Green onions, chopped (for garnish)
