  • 1 cup brown or green lentils, rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 3 cups vegetable broth
  • 1/2 cup coconut milk
  • 1/2 cup fresh spinach
  • Salt and pepper to taste
  • Cooked rice for serving
