Ingredients

  • 1 lb fresh turmeric noodles (or wide rice noodles)
  • 8 oz pork belly, sliced
  • 8 oz shrimp, peeled and deveined
  • 8 oz boneless, skinless chicken thighs, sliced
  • 3 tbsp fish sauce
  • 2 tbsp annatto oil
  • 1/2 cup roasted peanuts, crushed
  • 4 sesame rice crackers (banh trang me)
  • 4 hard-boiled eggs, halved
  • 2 limes, quartered
  • Fresh chili, sliced
  • 1 bunch mixed herbs (basil, mint, cilantro)
