Ingredients

  • 1 lb fresh udon noodles
  • 4 cups dashi stock
  • 2 tbsp soy sauce
  • 1 tbsp mirin
  • 4 oz chicken thigh, sliced
  • 4 shiitake mushrooms, sliced
  • 1/2 cup spinach
  • 2 shrimp, peeled and deveined
  • 2 eggs
  • 2 slices kamaboko (fish cake)

How it starts
