Ingredients

  • 1 lb boneless, skinless chicken thigh, cut into bite-sized pieces
  • 4 large eggs, lightly beaten
  • 1/2 large onion, thinly sliced
  • 2 cups cooked short-grain rice
  • 1 cup dashi stock
  • 4 tbsp soy sauce
  • 3 tbsp mirin
  • 2 tbsp sugar
  • Green onions, chopped (for garnish)
