Ingredients

  • 2 lbs beef marrow bones
  • 1 lb beef brisket
  • 1 lb thinly sliced raw beef (sirloin or eye of round)
  • 1 large onion, halved
  • 4-inch piece ginger, halved and charred
  • 4 star anise
  • 2 cinnamon sticks
  • 6 cloves
  • 1 black cardamom pod
  • 2 tbsp fish sauce
  • 1 tbsp sugar
  • 1 lb fresh flat rice noodles
  • 4 cups bean sprouts
  • 1 bunch fresh basil
  • 2 limes, quartered
  • 2 jalapeños, sliced

    Char the onion and ginger over an open flame or under a broiler until blackened on all sides.
