Ingredients

  • 1 cup quinoa, rinsed
  • 2 cups vegetable broth or water
  • 1 cucumber, diced
  • 1 bell pepper (any color), diced
  • 1/2 red onion, finely chopped
  • 1 cup cherry tomatoes, halved
  • 1/2 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 1 (15 oz) can chickpeas, rinsed and drained
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • Salt and black pepper to taste

    Bring the vegetable broth to a boil in a saucepan, add the quinoa, then cover and simmer for 15 minutes.
