  • 1 (3-4 lb) whole chicken
  • 2 tbsp olive oil
  • 1 lemon, halved
  • 1 head garlic, halved horizontally
  • 1 onion, quartered
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
