  • 1/4 cup rice vinegar
  • 2 tbsp sugar
  • 1 tsp salt
  • 8 oz sashimi-grade salmon, sliced
  • 2 sheets nori (for nigiri or rolls)
  • Soy sauce for serving
  • Wasabi for serving
  • Pickled ginger for serving
