Ingredients

  • 1 lb chicken thighs (bone-in, skin-on)
  • 6 cups chicken broth
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 stalk lemongrass, bruised
  • 1 tsp turmeric powder
  • 1/2 tsp galangal powder (or fresh)
  • 2 tbsp soy sauce
  • 1 cup cooked rice
  • 1 cup bean sprouts
  • 2 hard-boiled eggs, halved
  • 1/2 cup fried potato sticks or cassava chips
  • 1/4 cup chopped celery leaves
  • Lime wedges for serving

How it starts

    Combine the chicken thighs, chicken broth, onion, garlic, ginger, lemongrass, turmeric, and galangal in a large pot and simmer for 30 minutes.

    Remove the cooked chicken from the pot, let it cool slightly, then shred the meat and discard the skin and bones.
