Ingredients

  • 8 large shrimp, peeled and deveined
  • 1/2 sweet potato, thinly sliced
  • 4 green beans
  • 1/4 eggplant, sliced
  • 1 cup tempura flour
  • 1 large egg yolk
  • 1 cup ice water
  • Vegetable oil, for deep frying
  • 2 cups cooked short-grain rice
  • 1/2 cup dashi stock
  • 3 tbsp soy sauce
  • 2 tbsp mirin
  • 1 tbsp sugar
  • Grated daikon radish (optional, for garnish)

How it starts

    Make the sauce by combining dashi stock, soy sauce, mirin, and sugar in a small saucepan and simmering until the sugar dissolves.
