Ingredients

  • 2 lbs beef stew meat
  • 6 oz bacon lardons
  • 1 bottle (750ml) dry red wine
  • 2 cups beef broth
  • 1 large onion, chopped
  • 2 carrots, chopped
  • 8 oz button mushrooms, halved
  • 2 cloves garlic, minced
  • 2 tbsp all-purpose flour
  • 1 tbsp tomato paste
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 1 bay leaf
  • 1 sprig fresh thyme
  • Salt and black pepper to taste
  • Fresh parsley for garnish

    Cook bacon lardons in a large Dutch oven until crisp, remove them, then sear the seasoned beef in batches in the rendered fat.
