Cold Sesame Noodles

  • 1/2 lb spaghetti or Chinese wheat noodles
  • 3 tbsp tahini or Chinese sesame paste
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tbsp sugar
  • 1 clove garlic, minced
  • 1 tsp grated ginger
  • 1/2 cucumber, julienned
  • 1 carrot, julienned
  • 2 tbsp chopped peanuts (optional)
  • Chili oil, to taste (optional)
