Ingredients

  • 2.5 lbs bone-in, skin-on chicken thighs and drumsticks
  • 4 oz smoked bacon lardons or pancetta
  • 1 bottle (750ml) good quality dry red wine (e.g., Burgundy, Pinot Noir)
  • 8 oz cremini mushrooms, halved
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, peeled and sliced
  • 2 tbsp all-purpose flour
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 1 cup chicken broth
  • 2 sprigs fresh thyme
  • 1 bay leaf
  • Salt and black pepper to taste
  • Fresh parsley, chopped, for garnish
