Ingredients

  • 3 lbs beef short ribs, cut flanken style or English style
  • 1 large daikon radish, peeled and cut into large chunks
  • 2 carrots, peeled and cut into large chunks
  • 1 large onion, quartered
  • 10 cloves garlic, peeled
  • 1 inch ginger, sliced
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 2 tbsp sesame oil
  • 1/4 cup mirin
  • 4 cups water or beef broth
  • 5-6 dried jujubes (optional)
  • 1/2 cup chestnuts (optional)
  • 2 green onions, chopped (for garnish)

How it starts

    Parboil the beef ribs for 10 minutes to remove impurities, then drain and rinse thoroughly under cold water.

    Place the rinsed ribs in a large pot with soy sauce, brown sugar, sesame oil, mirin, water, onion, garlic, and ginger, then bring to a boil and simmer for 80 minutes.
