Ingredients

  • 1 lb chicken breast, sliced
  • 2 tbsp red curry paste (no coconut milk)
  • 1 cup chicken broth
  • 1/2 cup bamboo shoots, sliced
  • 1/2 cup green beans, trimmed
  • 1/4 cup baby corn
  • 1/4 cup Thai eggplant, quartered
  • 2 kaffir lime leaves
  • 2 tbsp fish sauce
  • 1 tsp palm sugar
  • 1/4 cup holy basil leaves
  • 2-3 bird's eye chilies, sliced
