Ingredients

  • 2 lbs oxtail, cut into 2-inch pieces
  • 1 lb beef tripe, cleaned and cut (optional)
  • 1/2 cup peanut butter
  • 1/4 cup toasted ground rice
  • 2 tbsp annatto powder (or 1/4 cup annatto oil)
  • 1 large eggplant, sliced
  • 1 bunch string beans, trimmed
  • 1 bunch bok choy, quartered
  • 1 large onion, chopped
  • 6 cloves garlic, minced
  • 8 cups water or beef broth
  • Salt and pepper to taste
  • Bagoong alamang (shrimp paste) for serving
