Ingredients

  • 1 lb chicken thighs, bone-in, skin-on
  • 4 oz egg noodles (fresh or dried)
  • 1 can (13.5 oz) coconut milk
  • 2 tbsp Khao Soi curry paste
  • 1 cup chicken broth
  • 2 tbsp fish sauce
  • 1 tbsp palm sugar
  • 1 lime, cut into wedges
  • 1/4 cup pickled mustard greens, chopped
  • 2 shallots, thinly sliced
  • 1/4 cup crispy fried egg noodles (for garnish)
  • Chili oil, to taste
  • Fresh cilantro, for garnish
