  • 1 lb potatoes, peeled and diced
  • 8 oz corned beef, canned or cooked, shredded
  • 1/2 onion, finely chopped
  • 1/4 cup pickled beets, diced
  • 2 tbsp gherkins, diced
  • 2 tbsp butter
  • 1/4 cup milk
  • Salt and black pepper to taste
  • 2 fried eggs (optional)
