  • 6 cups vegetable broth
  • 4 oz smoked bacon or speck, diced
  • 1 large onion, chopped
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 1 potato, peeled and diced
  • 2 tbsp red wine vinegar
  • 1 tbsp olive oil
  • Salt and black pepper to taste
  • Fresh marjoram or parsley, chopped, for garnish
