Mapo Tofu

Ingredients

  • 1 lb firm tofu, cut into 1-inch cubes
  • 4 oz ground pork
  • 2 tbsp doubanjiang (fermented broad bean paste)
  • 1 tbsp douchi (fermented black beans), rinsed
  • 1 tbsp Sichuan peppercorns, toasted and ground
  • 3 cloves garlic, minced
  • 1 inch ginger, minced
  • 1 tbsp soy sauce
  • 1 tsp sugar
  • 1/2 cup chicken broth
  • 1 tbsp cornstarch slurry (1 tbsp cornstarch + 2 tbsp water)
  • 2 tbsp chili oil
  • 2 green onions, chopped

    Prepare the ingredients by cutting the tofu into cubes, mincing the garlic and ginger, chopping the green onions, and grinding the toasted Sichuan peppercorns.
