Ingredients

  • 3 lbs beef short ribs or chuck roast
  • 1 large marrow bone (optional)
  • 4 carrots, peeled and cut into large chunks
  • 3 leeks, white and light green parts, cleaned and cut
  • 2 turnips, peeled and quartered
  • 4 potatoes, peeled and halved
  • 1 large onion, halved
  • 2 celery stalks, cut into large chunks
  • 3 cloves garlic, smashed
  • 1 bouquet garni (bay leaf, thyme, parsley tied together)
  • 1 tbsp black peppercorns
  • Salt to taste
  • Water to cover
