  • 2 lbs bone-in, skin-on chicken pieces (thighs and drumsticks)
  • 1 large red bell pepper, sliced
  • 1 large green bell pepper, sliced
  • 1 large yellow bell pepper, sliced
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1/2 cup dry white wine
  • 1/2 cup chicken broth
  • 2 tbsp olive oil
  • 1 tsp smoked paprika (or Espelette pepper if available)
  • Salt and black pepper to taste
  • Fresh parsley, chopped, for garnish
