Ingredients

  • 2 lb lamb shoulder, cut into 2-inch pieces
  • 3 tbsp ghee or oil
  • 2 large onions, thinly sliced
  • 2 tbsp ginger-garlic paste
  • 1 cup plain yogurt, whisked
  • 1 cup water or lamb broth
  • 2 tbsp Rogan Josh masala
  • 1 tsp Kashmiri red chili powder
  • 1/2 tsp turmeric powder
  • Salt to taste
  • Fresh cilantro for garnish

    Brown the lamb pieces in ghee, set aside, and then sauté the onions in the same pot until deeply caramelized.
