Ingredients

  • 2 lbs beef roast (e.g., top round or chuck)
  • 2 cups red wine vinegar
  • 2 cups water
  • 1 large onion, sliced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 bay leaves
  • 1 tsp black peppercorns
  • 4 whole cloves
  • 1 tsp juniper berries
  • 2 tbsp vegetable oil
  • 6 ginger snap cookies, crushed (for thickening)
  • Salt and black pepper to taste

How it starts

    Heat vegetable oil in a large pot or Dutch oven over medium-high heat and sear the beef roast on all sides until browned.
