  • 1 lb pork spare ribs, cut into 2-inch pieces

  • 3 stalks lemongrass, bruised and sliced
  • 6 slices galangal
  • 5 kaffir lime leaves, torn
  • 3-4 dried chilies, rehydrated and crushed (or to taste)
  • 2 shallots, halved
  • 3 tbsp fish sauce
  • 3 tbsp lime juice
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped fresh mint
